I’m taking the bull by the horns so to speak. I haven’t been getting along with breakfast for some time and I aim to rework that this year. Join me in my quest to find 52 Fresh Breakfast Ideas that don’t leave me feeling heavy or my family still hungry. We may revisit dishes you already know or find some new favorites but my goal for 2014 is a new appreciation for breakfast.

Obviously my 52 weeks is going to run into 2015. But enough about that.

Lately, as we prepare to move I’ve been steadily using up all our pantry and freezer stores. One thing I’ve been doing is I’ve been taking this Pumpkin Muffin Recipe and making Sweet Potato Muffins.

So delicious, satisfying, and most importantly EASY!

So this recipe is super easy and all I do for the Sweet Potato version is puree about a half a small sweet potato in the blender with a little water so make what I consider a puree. I also added walnuts to the recipe for a little extra protein in the morning. And I use maple syrup for my sweetener.

While they show our home I’ve been hanging out with my mom at her house. I’ve been taking the muffins over there and my mother, who has a very delicate stomach and needs to watch everything she eats, has been enjoying them with no problems.

So that’s it in a nutshell. They’re very easy to make. It’s all in one bowl. And it’s a great way to use some leftovers (sweet potatoes). Even if you don’t bake a lot it takes nothing to stir these up and bake.
