Happy Monday! It’s a beautiful day here in the Pacific Northwest. I’ve gotten up (early), exercised, and had a lovely breakfast.

Today is National Chocolate Éclair Day.  I’m actually not fond of Éclairs but Thursday is National Catfish Day. Now that’s one I can get behind. We buy our catfish in bulk for the freezer which is really wonderful. This is a reminder to for me to have my husband pick up another 15lb box.

Continuing our quest for optimal health (hey, we do our best) this weekend we picked up a [easyazon_link identifier=”B007TIE0GQ” locale=”US” tag=”mommybabytool-20″]Nutribullet[/easyazon_link] at Costco. It was actually a semi-impulse purchase.

We’ve been hashing over the price tag of the Vitamix and Blendtec for some time now. We know our primary use for either machine would be smoothies.  We wanted a little more power to handle the greens we put in our healthy smoothies. And also something that would make it a little easier for my husband to make his smoothies quickly in the morning and go.

We already have a very good Blender and a great Hand Immersion Blender so paying so much for yet another blender (that could handle our greens and a bit more) didn’t seem so smart right now.

Having talked to so many people that love their[easyazon_link identifier=”B007TIE0GQ” locale=”US” tag=”mommybabytool-20″]Nutribullet[/easyazon_link] we thought it might fit the two main criteria we have with the added bonus of being so much cheaper.

This was a purchase made only yesterday and we’ve only used it for breakfast as I write this but I’m really enjoying it.

It was easy to set up. I can easily make a smoothie for myself and my daughter and hubby can make his as he jets out the door.

I’ll keep you updated.

For dinner this week it’s easy and healthy with a lot of fresh veggies on the side. Our tomatoes are ripening, the peas are spent, the swiss chard (for the smoothies) is ready to pick and the zucchini is flowering. Yaaay!

Tuesday:  Skillet Pasta

Wednesday: Chicken Stir Fry

Thursday: Black Bean Soup and Chips

Friday: Turkey Quesadillas
