Weekly Menu Plan for April 13, 2015

Happy Monday. I hope you had a fruitful, productive weekend, and a chance to reboot for a new week. I always feel like a new week is a new chance to get things together and catch up where I may be behind.

Last week I turned my leftover salmon into salmon caked covered with panko bread crumbs. It took some time to get all the bones out. I was kind of surprised how many there were as this was filleted fish but oh well. I did miss one which my daughter found. I hate that. It always makes me think of when Gloria Gaither is saying the dialogue of her song with Bill and reminisces how they took their baby daughter to the ER with a bone stuck in her throat. So yeah fish unnerves me for that reason.

Those fish cakes were really good and this week I have some more leftover fish to work with. This times it’s catfish and we’ll be having that Monday. Tune in next week to see if I revamped it or served it as is…

  1. Neat idea working on recipes for leftoever fish. A friend of mine use to use leftover red snapper to make something smiliar to tuna salad. Was not very fish and tasted pretty good
