Menu Plan Monday for May 4, 2015

It’s Sunday night. The time I sit down and think about what I’m going to feed my family from my vast stores that I lovingly hover over.

Last week I had lots of changes in my planned menu. That usually happens. Not a biggie. My meat for my meatloves never thawed fully so we ended up having catfish instead. It was good but, man! I really wanted meat loaf! So that’s back on the menu for this week.

I also had planned to make the Asparagus and White Bean Gratin.  Also another recipe from last week. I was really looking forward to that but my grocery shopping got moved to a different day and I FORGOT TO MAKE A LIST! Don’t do what I did. Always take your grocery shopping list! It never fails. If I forget get my grocery shopping list, I forget something. This time I forgot a couple of ingredients for the gratin so, again, I’m going to try that this week.

Then! On Friday, we usually have quesadillas. Very yummy, good, easy for me. But I had some fresh mozzarella that wasn’t going to last too much longer in the fridge so I made pizzas with that. Those we’re really good!

So some of the dishes I meant to make last week are on the menu for this week.

But guess what! No leftovers. My husband actually went through and cleaned out the refrigerator for me and tidied things up removing science experiments and such. And we had no leftovers from the dinners so all is good.

Grocery Shopping List

So here’s is this week’s dinner menu….

Monday: Meatloaf

Tuesday: Chicken curry

Wednesday: turkey sausages in a bun (bear with me, it’s an idea in the making)

Thursday: Asparagus and White Bean Gratin

Friday: Ground turkey and beef Quesadillas
