Monday – Menu Plan for Monday June 2, 2014

I forgot to post my menu last week. Things were busy but I did a bit of experimenting so that’s good. I made some yummy Ground Turkey and Vegetable Baked Wontons last week and I’ve got the recipe typed up for you.

I regret that my measurements are not more precise if you need that. This is really one of those recipes where I eye everything and taste as I go.

You should be able to find wonton wrappers in Asian produce section of your grocery store. Mine are in the produce section where the prepared salads are. I’ve forgotten how many are in a package but I made about 50 wontons. I put some up in the freezer for lunches.

The sauce too was not measured. I dumped, stirred, tasted, tweeked, etc. So sorry about that. I’ll need to post a separate recipe for that.

So that’s what happened last week.

Here’s what is on the menu for this week.

Monday: Baked Salmon with Hawaiian Sweet Potatoes: This is a simple fillet of salmon baked and then broiled off in the oven. The Hawaiian Sweet Potatoes are purple and sweeter than regular Sweet Potatoes

Tuesday: Chicken Stir Fry: I usually use chicken thighs for this. Cut into bite sized pieces and I saute whatever veggies I have on hand and mix up a soy-free soy sauce (coconut aminos). Served with rice noodles.

Wednesday: Lamb Gyros with Tzatziki Sauce: I use leftover lamb roast for this. Wednesdays can be busy. I buy my pita bread but one day I’ll make it. I use whole wheat bread.

Thursday:Baked Ziti with Italian Turkey Sausage (an eMeals recipe). Thursdays are also busy and this looked like a good recipe to make.

Friday: Open-Faced Burgers with Balsamic Onions and Goat Cheese This also looks delicious. I’m toying with swapping blue cheese for the goat cheese. But we’ll see. (an eMeals recipe)
