Monday – Menu Plan July 7, 2014

Last week was busy but I managed to make some good meals. As we get closer (hopefully) to a move date we’re eating down the freezer and saving on groceries…sort of. Since it was the 4th of July we did have a family cookout at my aunt’s home. Usually it’s in our home but right now that is NOT in any way prepared for guests. We brought ground turkey and beef burgers along with some fixin’s.  So I did spend a little last week in prep for the holiday and this week it’s back to cheap eats.

Also last week I made gyros using a lamb and beef blend. These were SO GOOD! I got the recipe from some new show I saw a piece of. Restaurant something or other. The buy made these yummy looking gyros so I did what he did and here it is in a nutshell…

1 pound each of ground lam and ground beef mixed with some breadcrumbs (I eyed this. About 1/2 a cup), chopped onions, and spices (cumin, salt, pepper, basil, oregano). Blend with some water (again eyeball about 1/2 cup) in a food processor (my processor died so I used a blender). Shape into a square foil pan and bake a 350 until done (yeah I just kept checking it after 30 minutes).

Mix up some torn lettuce with diced red onions, and chopped tomato. Sprinkle with lemon juice and olive oil.

After the meat blend is done cut it into slices and fry off in a pan (a little oil).

Serve on pita bread with tzatziki sauce and veggie blend. Yummm! You can see the picture of it up above

Now this week I HAVE to get the freezer down a bit. There is a big hunk of turkey in there that I’m actually afraid to tackle. I have no plans to use it but probably the week we move I should cook it up so I can make sandwiches and such with it.

Monday: Turkey/Beef Meatloaf

Tuesday: Baked Chicken

Wednesday: Egg Rolls (without the egg)

Thursday:  Minestrone Soup

Friday: Steak (I found some steak in the freezer)
