My Soy Free Menu Plan for February 10, 2014

Happy Monday and another delicious week on the horizon!
Let’s recap.Last week I again swapped out some dishes on my menu for some new stuff.

I  have a freezer full of frozen chicken thighs, 10 pounds of which I’ve promised to my sister. In the mean time I felt like I needed to deal with some of it. They weren’t frozen individually, which would have been nice, but that’s okay. I just made do.

For this first round of chicken thighs I just baked them in the oven. I covered them with onions,, salt and pepper. Halfway through I covered them with foil so they wouldn’t dry out. When they were done I cooled them and then parceled them out into individual containers for meals.

Grocery Bags with Food

I will use these to make soups, sandwich fillings, chicken quesadillas and anything else I can think of.

This week I’m feeling the need for some comfort food so I’m starting off the week with meatloaf. The rest of the week is nothing special but will be yummy nevertheless.

Monday

Ground Turkey and Ground Beef Meatloaf

Mashed Potatoes / Broccoli

Tuesday

Baked Swai Fish

Brown Rice / Zucchini

Wednesday

Asian Stir fry

Thursday

Minestrone Soup

Chicken Salad Sandwiches

Friday

Turkey Quesadillas
