Greetings:

Happy Monday! I don't know why but Mondays just seem like a chance start anew. Recover, refresh, get a hold on things that are getting out of hand and more.

Last week it seemed that I had more apples in the house that I knew what to do with. Truthfully I still do but let's talk about where they came from.

Both were gift boxes from family members who know how many apples my daughter can go through and how much my little family loves apples.

We had about 60 lbs of apples to deal with.

For about 20 lbs of them we're eating fresh. For some of them I slice them up with an apple cutter, sprinkle with lemon juice and they keep nice and fresh in the refrigerator.

My daughter loves to eat the rest whole. She eats an apple every day as a pre-breakfast.

Another 20 lbs I ended up canning. I originally wasn't because my mother was unable to help me and I REALLY didn't want to deal with all that by myself but I ended up spending Thursday on my feet and getting through a fair amount of the apples.

Since there were some Granny Smith in there I canned them in a very light syrup (much to my nephew's joy). I used directions from PickYourOwn.

I almost, almost, don't want to see an apple ever again….maybe I don't mean that.

Seasonal Ideas:

We start school in 2 weeks so I've been all about easy, healthy breakfasts and lunches. My husband leaves early in the morning (yeah he fends for himself during the summer).
