Menu Plan Monday October 12, 2015 (Happy National Gumbo Day)

Happy Monday! I hope you’ve had a lovely weekend. It’s been deceptively cool in the mornings here but warming up to sweat worthy temperatures by noon.

Today is National Gumbo Day. Warm up with this thick and filling traditional southern stew this week. Gumbo is a thick yummy stew that came about during the 18th century in Louisiana. It is very reminiscent of the Nigerian stew that I grew up with and which is considered comfort food in my home. There are many gumbo recipes from shellfish, to sausage, to chicken and some include okra as a thickener. Okra may be considered an acquired taste. I love it. My sister not so much. My husband really not so much. But yumm! It’s hard to find fresh in my neck of the woods but I can get it frozen any time of year.

This week I’ll be including gumbo in my own menu AND taking a crack at making my own pie crust for my Salmon Quiche (I’m bad at pie crusts but it’s something I want to get better at).

Wednesday: Homemade Chicken Nuggets

Thursday: Quick and easy sausage gumbo

Friday: Ground Turkey Quesadillas
