Greetings:

Wow! It’s October already! And there is a nip in the air. Even so the sun has been beating down on us in the Pacific Northwest. It’s a strange mix of nippy morning and blistering afternoon. Well my plants are happy so I’m happy.

Last week, as I mentioned, I tried the Turkey Apple Burgers via Once a Month Meals . Can I just say they were a hit! I was really hemming and hawing over having 1/2 a cup of brown rice added to the mix but I went ahead and followed the recipe. They were delicious and I even managed to freeze a couple (which was the idea in the first place).

I won’t remake them right away but definitely on the regular list.

You can find this recipe along with freezing instructions in Once a Month Meals. Give it a trial run with a mini diet specific menu.

Seasonal Ideas:

Today is National Apple Betty Day. Do you know what Apple Betty is? Here’s a recipe. You can find a little bit about it in What’s Cooking America’s section on cobblers. Basically it’s the fruit baked between layers of crumbs.

Here’s a basic recipe for you to try.
