Woo hoo! Life is getting hard but I can handle it.

This is me talking to myself. Life actually isn't really getting hard I'm just being whiny. I would like this whole home buying thing to end but I understand everyone is making sure all the t's are crossed and the i's are dotted but it's just seems to drag on and one.

In the meantime we're still eating through the freezer. I did break down and bought a pound of hamburger last week so I could make lasagna, I already had the noodles, sauce (jarred), and cheeses (cottage, mozzarella, parmesan) so I just needed that pound of beef to top everything off. It was good and lasted for two meals.

None of my menu went as planned last week. On Wednesday we did a fair bit of running around and ended up eating out (Baja Fresh which gave my daughter a bad reaction so our list of places to eat out is getting smaller).

The only thing I ended up making from my menu was the salmon quiche. That was yummy and we ended up eating the leftovers for breakfast. It was cooler last week so warm foods hit the spot.

I also made my easy chicken cassoulet to use some of my dried beans. I don't have many and that recipe created enough for 2 meals. And then finally some fish that I had in the freezer also. I pan fried that.

Now without further ado our menu for the week. Yesterday I cooked up another 10 lbs of chicken thighs so we'll be eating some of that this week along with these other dishes…

Monday: Salmon Loaf

Tuesday: Steak and Potatoes

Wednesday: Chicken (from the freezer) and noodles

Thursday: Lentil soup and sandwiches

Friday: Quesadillas
