Monday – Menu Plan for December 15, 2015
Happy Monday Everyone!
I hope you've had a lovely weekend and are ready to plan the meals your family will be nourished from for the week.
We had high winds in our area which resulted in a black out lasting several hours. This sort of put the cabash on dinner plans and we ended up having corn chips and guacamole for dinner. When the power came back on the first thing I did was run and check on my freezer. Phew! The outlet had tripped but I just reset it and all was well.
I also made a quick and easy stir fry last week. Some cut up boneless skinless chicken thighs and various veggies shredded and chopped. Onions, carrots, cabbage, broccoli, mushrooms, and kale. I splashed it with some coconut aminos to season a bit but that was all. It came out really good AND it was really easy! So I'll be making that again for sure!
I pulled out the yogurt maker to make a batch of fruited yogurt. I haven't made yogurt in about a month and I had frozen some culture because I KNEW I would get lazy and slack off. But then I was wanting some for breakfast so I got it out again. I cooked some frozen berries with a bit of water and some sugar in a sauce pan. I cooked them until they kind of made their own fruity syrup. Not too long. Just brought to a boil and simmered until the it cooked down a little.
I used this in the bottom of my yogurt cups. It came out so good I may have to follow these directions for making bigger batches in my oven. You can buy [simpleazon-link asin=”B003V2J0NM” locale=”us”]a second tier[/simpleazon-link]so I may end up doing that.
This week's dinners aren't too well thought out. Tomorrow is leftovers and I would like to make some soup on Thursday. Quesadillas are on Fridays but Tuesday and Wednesday are up in the air as usual.
