Monday – Menu Plan December 1, 2014
Happy Monday. I hope you had a wonderful week last week.
We celebrated Thanksgiving at our home. It was the first time we cooked a turkey in a gas oven and things didn't exactly go as planned.
We have been cooking our turkeys in an electric oven for about 9 years now with no problems. But this turkey came out done in the thigh and the breast but the back (which we start the roast on) was still underdone for some reason. We worked it out but it was frustrating. My husband wants to buy another turkey and do some testing. It's not a bad idea because then I can fill the freezer with some cooked meat!
Our other dishes came out well. We contributed sweet potato puree and those crispy potato roasts we keep seeing on Pinterest. T
The sweet potato puree was a hit. All I did was cook some cut up sweet potatoes with a little maple syrup and a dab of butter until soft and then puree the whole thing in the blender. Hit! The potatoes are really easy if you have a [simpleazon-link asin=”B0000632QE” locale=”us”]mandoline[/simpleazon-link]. Cutting all those slim potato slices by hand? Not me.
It's time to decide what to eat for the next week. I do this on the weekends on Sunday night. Sometimes with my family's input and sometimes I like to surprise them.
We still have leftover turkey and other odds and ends from last week. I've already made a few leftover meals from such as turkey quesadillas and just plain ol' “plate of leftovers”.
This week I have enough for one leftover meal and then it's back to basic.
I ‘ll try one dish in the crock pot this week.
Monday: Shepherd's Pie with turkey
Tuesday: Cat fish (I think I might try it)
Wednesday: Chicken Curry
Thursday: Potato Soup
Friday: Quesadillas
