This past week I made chicken curry, Thai style. I had no recipe and not even all the ingredients (except the all important coconut milk) but it was DELICIOUS!

I used this recipe as a base and in the meantime I’ve picked up some Red Curry paste for my next batch. So I’ll be trying that this week.

The lamb gyros we had last week were also delicious. I actually had forgotten to purchase some cucumbers so I made the sauce with fennel instead. Amazingly my family loved it and sopped up all the sauce!

And finally I opted to make Basil Caesar Salmon instead of just regular old salmon. It’s a great way to prepare a salmon fillet. Here’s the recipe Basil Caesar Salmon.

 

Monday: Baked Ziti with Italian Turkey Sausage (an eMeals recipe).

Tuesday: Sole with Bamboo Rice

Wednesday: Ground Chicken Potstickers

Thursday: Chicken Curry (I kinda did this recipe but I didn’t use cornstarch, I used chicken stock, and also zucchini and tomatoes.

Friday: Turkey Fajitas
