Monday – Menu Plan for September 15, 2014
Happy Monday! A new week and a new chance to eat healthy and fill my family’s tummies.
We ate a lot of pasta last week! It’s easy, delicious, and I ended up with more leftovers than I bargained for so we kept eating it. I never did get to make my minestrone soup. I still want to make it though but I’m not sure if it’s on this week’s menu.
Go figure I prefer whole wheat pasta over the white flour pasta. I like the Barrilla brand (I think that’s the name, blue box, Safeway) and purchase that. I NEED, NEED, NEED to make some pasta. My expensive pasta machine is gathering dust in the cupboard and I even have the perfect island top to make it on. 8 feet of prime space is awaiting my return to the pasta making world. In the mean time I buy it buy the box.
On to other news. My hubby hinted that he would like some pork this week. How did he hint? He began the thawing process in the refrigerator. I opened the fridge last night to see this.
Now I wasn’t planning on pork for Monday but I can take a hint so I have to scramble a bit for some pork dishes.

Tuesday: Baked Salmon
Wednesday: Garlic Lemon Chicken with Pasta (42 Simple and Healthy Dinners)
Thursday: Hearty Lentil Stew (Everything Beans Book)
Friday: Chicken Quesadillas
