Monday – Menu Plan for the Week of July 21, 2014

Happy Monday everyone. I hope you had a great week last week. I had a nice week. It’s hot in my neck of the woods so we had some cool dinners.

We took a jaunt out to our local Parade of Homes show. We wanted to see if we could get some ideas for our new home….not.

Man! Everything was humungous like it was made for giants and then the some of the stagers had put in very gaudy details. They were nice homes and pretty luxurious but… I don’t know I just couldn’t imagine myself living in any of those homes. But I could imagine this nice dining table from Restoration Hardware and some great blinds from Budget Blinds if you can believe it. I was a bit shocked because budget and parade of homes don’t seem like they would be bosom buddies.

But this post is supposed to be about food so back to that. At the Parade of Home’s show I had an epiphany that I needed to be making meals for hot weather. I had totally skipped making my summer dinners salads and such so far this year because I was so focused on moving!

Well I remedied that and made a delicious dinner salad from some leftover salmon on Friday.

When it comes to dinner salads there are hardly any rhyme or reason to the whole thing but here are the basics of what I threw together.

Salmon Summer Dinner Salad

2 Hard Boiled Eggs

2 Boiled Potatoes

1 cup of frozen peas thawed

2 tomatoes chopped

1 English cucumber sliced, slices cut in half

2 leftover servings of baked salmon,flaked

Dressing

Olive Oil

Lemon Juice

Mustard Powder

Sugar

Mix to taste and serve over salad.

 

So now I have to come up with good meals for the rest of the week.

 

Monday: Salmon Quiche

Tuesday: Apricot Chicken

Wednesday: Pan Fried Pork Cutlets and Potato Salad

Thursday: Lentil Soup and Sandwiches (soup from the freezer)

Friday:Thai Ground Chicken Tacos. ( I got this one from something I saw online so if it works out I’ll post more about it. )
