Monday – Menu Plan June 17, 2014
I hope you had a lovely Father’s Day.
We had a lovely dinner for the father’s in our family and made a special visit to the Care Facility for another elderly family member.
So this week marks a very busy one for us. We will possibly be moving in 30 days. That means no-brainer dinners and LOTS of packing.
Our freezer and pantry are packed with all the goodies that I love to buy. So we (family) think it’s a good idea to eat through the freezer and pantry to have a clean slate in our new dwelling place. That means boring and/or strange dinners. I still have 20 lbs of chicken thigh meat in the freezer that has not been dealt with so I will be attempting to take care of that this week.
Last week’s meals went according to plan. On Friday I made tacos and tired of them always tipping over I made a quick taco holder out of fold. I made it based on an actual taco holder we used to have and gave away years ago. That one wasn’t practical and was made to hold all the tacos but I just needed something for my measly two.
Here’s this week’s menu:
Monday: Quick London Broil with Hawaiian Potatoes and Broccoli
Tuesday: Chicken Stir Fry
Wednesday: Hamburgers
Thursday: Soup
Friday: Quesadillas (my plan is to use leftover meat)
