Monday – Menu Plan for May 19, 2014
Last week I didn't post a menu plan. Why? Well we took a nice vacation at the beach and get this… my husband did the cooking!
Isn't that nice?
Being at the beach inspires you to eat more seafood and lots of fruit and veggies to keep hydrated and cool.
Temperatures were in the low 90's but the breeze blowing off the water cooled us down sufficiently.
After a day on the beach and a tummy full of healthy meals the Sweet Peanut would collapse in to bed each night.
Oh if she only did that at home!
With such a good diet of fish and fresh fruits and veggies. I've come back with a renewed interest in exercise. And a renewed interest in using up our leftovers. We have a ton in the freezer!
I'm going to kick off the week with Monday's menu of using leftover salmon that I found in a Scottish Cookbook.
Mid-week I'll use a leftover lamb roast to make Lamb Gyros.
Friday I'll be using leftover turkey for our weekly Quesadillas.
The Week's Menu
Monday: Salmon Fish Cakes (the recipe I found uses cooked salmon)
Tuesday: Crispy Cod over Veggies
Wednesday: Hamburgers and Sweet Potato Puffs
Thursday: Lamb Gyros with Tzatziki Sauce:
Friday: Turkey Quesadillas
