Happy Monday! I hope your weekend went well. We’ve had it raining cats and dogs in the Pacific Northwest. That means soup and stew weather.
Last week I made the Cilantro Lime-Burst Chicken Thighs from the Trim Healthy Mama Cookbook. It’s a fairly easy recipe that gets to be put in the slow cooker. Top props for that!
It was really delicious and has made it on the family favorites list.
I’m really enjoying digging into this resource and will hopefully have a review Part 1 for you this week so stay tuned.
