Monday Menu Plan November 9, 2015


Happy Monday! I hope your weekend went well. We’ve had it raining cats and dogs in the Pacific Northwest. That means soup and stew weather.

Last week I made the Cilantro Lime-Burst Chicken Thighs from the Trim Healthy Mama Cookbook. It’s a fairly easy recipe that gets to be put in the slow cooker. Top props for that!

It was really delicious and has made it on the family favorites list.

I’m really enjoying digging into this resource and will hopefully have a review Part 1 for you this week so stay tuned.

Seasonal Ideas:

Today is National Scrapple Day!
Scrapple is a regional specialty of the Mid- Atlantic States (New Jersey,Pennsylvania, Delaware, Maryland, and Virginia) in the U.S.
Scrapple a mix of pork scraps, cornmeal, flour and spices. It is formed into a loaf and pan fried before serving. It is typically served for breakfast with condiments.
So I don’t really plan on trying Scrapple out but if you’re curious you can try your own hand at a semi-easy recipe courtesy of Bobby Flay at the Food Network here.

Tuesday: Meatloaf

Wednesday:  (make bread)

Thursday: Lentil Soup and Chicken Salad Sandwiches

Friday: Ground Turkey Quesadillas
