Monday – Menu Plan October 13, 2014

Happy Monday! It’s time to think about food again. Not like I’ve NOT been thinking about it all week but it’s time to plan for the coming week’s meals.

Last week we ate leftovers for two nights, green curry, and some Rock Fish. It was actually an uneventful week of meals. I really hardly remember the dishes. That’s not good. I need to up my game but at this moment not sure how.

This week I’m again working with my skeleton template. Basically I have a type of dish I make each day of the week and it’s up to me to fill in the blanks on said day. I kind of know what I’m going to be doing each day but I am prone to changing last minute so I’ll just leave it as is.

We had meatloaf, made by my husband last night so tonight will be leftovers from that.

The main thing that helps me pull meals together is  not what is in my fridge, or in my pantry it is my meat in freezer storage. Here’s the list…

  • salmon
  • rockfish
  • pork
  • ground turkey
  • ground beef
  • chicken drumsticks

So I should be able to come up with some good meals from that right? Right!

Here’s my menu for this week…

Monday: Leftovers (meatloaf)

Tuesday: Up in the air

Wednesday: Stir Fry (beef… I think)

Thursday: Soup (kale and squash)

Friday: Quesadillas (turkey)
