Monday – Soy-Free Menu Plan for April 6, 2014
How are you doing this week? I'm fine but seem a little tired and sluggish. Not sure what I attribute that to but I'm going to try to add more veggies to my day.
I've been eating veggies and hummus for breakfast. I know that didn't come up in my 52 Weeks of Breakfast post but it should this week. I needed an image to work with.
Do you like hummus? That chickpea puree is surprisingly delicious. Remember we made some Red Pepper Hummus for New Year's a few months ago. My mother has been making it with black eyed peas which is reminiscent of a dish we used to eat in Nigeria. I'm thinking of making some with beans too so if I do or if I eat some of hers I'll let you know.
This week I have several days of chicken. I found some rogue chicken in our freezer. If you'll note that on Wednesday, even though I'm allergic to soy, we'll be having Chinese Beef and Broccoli. Which does include soy sauce. So you may be asking yourself, “What is she going to do?”
