What we planned on eating

Monday: Meatloaf and Rice

Tuesday: My quick Cassoulet

Wednesday: Swai fish with Creamy Lemon-Horsradish Sauce : eMeals (but they use Talapia)

Thursday: Morrocan Braised Chicken Thighs : eMeals

Friday: Quesadillas

 

What we ended up eating.

Friday: Chicken Quesadillas

Can you believe it??!! We actually ended up eating what I had planned. And let me tell you Wednesday’s dish from  eMeals with the Swai fish was a real hit with the family. I wasn’t sure how it would turn out but it was delicious! Thurday’s dish was too and both have been requested (by my family) for future meals.

 

This week’s menu

This week I have 10 lbs of chicken thighs to work through so expect an update on that next week. In the meantime here’s my menu…

Monday:  Baked Turkey and Sweet Potatoes

Tuesday: Chicken mix over pasta

Wednesday: Honey Mustard Roast Chicken Thighs

Thursday:  Minestrone Soup and Sandwiches

Friday: Quesadillas
