On the Kitchen Counter
I talk about the kitchen counter because it takes up a good part of my day. Apart from cooking just because I love it I have to feed my family too.
I took a couple of weeks off from this installment mostly because we were on vacation but also to think about my vision for sharing my weekly meals with you.
I have two purposes when I share what’s on my kitchen counter.
1.) It keeps me accountable for what’s for dinner.
2.) I do enjoy food and should share more of what I discover and love.

While on vacation I was pleasantly supplied with delicious meals from my father’s wife (he married her after I was grown so I don’t call her my step-mother but we are very close).
Her meals were very spicy very flavorful. When she first started cooking on my visits many years ago her meals were not that palatable so she’s come a long way. She’s a very busy PhD so cooking is was not her top priory but she seems to have come to love it. My daughter and I spent a lot of time hanging out with her in the kitchen experimenting and eating!
I’ll spare you all the details of how I accidentally got some Habanero pepper in my plate. My father grows them in his garden and loves them. We were sent home with some so this could be interesting.
Usually my weekly menu incorporates some dishes that have been on my mind for a few days. I’m finding complete blanks this week except for a hankering for some sugar cookies. To keep me from gaining too much weight I’ve been eyeing this sugar cookie recipe.
Well let’s give this Weekly Dinner Menu a go.
My Weekly Menu Plan:
Monday: Leftover Spaghetti with Veggies
Tuesday: Meatloaf and Mashed Potatoes
Wednesday: Catfish nuggets and Salad
Thursday: Lentil Soup
Friday: Sandwiches on the go (we’ll be eating away from home this night).
