Welcome to the beginnings of a new week.
The day before my father came to visit a little over a week ago I was able to get organized enough to put 10 meals in the freezer. Those meals are coming in handy this week. The setup is to make 10 meals in about an hour for the freezer. Usually when I use the MyFreezEasy monthly menu plan I only make about 8 recipes but this time I made all 10 meals while clocking myself. A little less than an hour not including doing the dishes!
This week we’ll be eating a few more of those meals.
Last week I posted a review on Once Again Nut Butters. I’ve got a couple of recipes in there and one of them, (Groundnut (Peanut) Stew Over Rice) you could use in your dinner menu this week! I’ll include it at the bottom of the post.
My Weekly Menu Plan:
Monday: Thai Peanut Chicken (freezer meal)
Tuesday: Beef Stir Fry
Wednesday: Slow Cooker Russian Shredded Beef Sandwiches (freezer meal)
Thursday: Ground Turkey Burgers
Friday: Pizza!

Groundnut (Peanut) Stew Over Rice
Ingredients
- 1/2 cup onion chopped
- 1/4 cup parsley fresh
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/4 cup peanut butter
- 1 1/2 cups chicken stock
- cayenne pepper to taste
Instructions

Brown chicken in olive oil. Remove, set aside, and keep warm. Add onions to pan and saute until limp. Add salt, paprika, garlic powder, cayenne pepper, and peanut butter. Stir in chicken stock, cooked chicken, and parsley and set to simmer on med low heat until sauce thickens slightly (don't let it turn into a lump).

Add a bit more chicken stock if sauce is too thick for your liking.
Recipe Notes
Serve over white rice or yams.
