Happy Monday! I hope you had a lovely weekend.

We had a busy week last week and those freezer dinners from MyFreezeEasy came in handy! I've got a new batch to try and make up this week but since I don't go grocery shopping until Wednesday the bulk of this week's menu will be coming from what we already have on hand.

I had forgotten what a blessing Freezer Cooking can be.

I went outside to water the garden the other day. I go out every day so how did I miss this?! I pick zucchini constantly but somehow this big boy just skipped my attention. I guess he's the perfect size to collect seeds from but for now he's our dining table centerpiece.

Can you cook them when they get this big? If you know leave me a note in the comments. I was considering some Zucchini Butter.

  1. Wow, that is a really huge zucchini! I have made pickles with some that are pretty large and they turned out fine. Each pickle slice was the size of a hamburger.
