On the Menu Week of March 17, 2014 – Soy Free

Last week I made some Easy Musakka’a with an eggplant I picked up at the store. I have/had been reading about Middle Eastern cooking and wanted to try something the new for the family.

This isn’t the version of Moussaka with the ground beef and cheese and potatoes. Which I’m not so sure I would enjoy. This version of Musakka’a is just eggplant, chickpeas, onions, and tomatoes. It was very delicious and easy to put together.

This version came from my now vintage edition of Foods of the World: Middle Eastern Cooking.

Grocery Bags with Food

Here are the basic steps.

  1. cut eggplant into chunks and sautee in olive oil for several minutes.
  2. Move eggplant to a greased (olive oil) baking dish.
  3. Sautee onions in pan that eggplant was in. Cook until limp.
  4. Transfer onions and pour on top of eggplant. Salt and pepper.
  5. Rinse and drain a can of chickpeas. Pour those over eggplant and onions.
  6. Top with chopped tomatoes (I used canned). Salt and pepper.
  7. Bake in a 350 oven for about an hour.

It came out delicious and we’re even planning on serving it at a dinner in a few weeks.

The original recipe says to bring it to a boil on top of the stove before putting it in the oven. Since I was using my Pyrex pans I skipped that part. Makes me think I need a Dutch Oven.

I’ve also started juicing again. You can see from the image above that my juicer is a very old Panasonic. My dad bought it for me when I was 16. He had an even older juicer that I was admiring so he picked up one for me. He was drinking carrot juice before it was in vogue. I’ve been using it for over 25 years and it’s still going strong. Maybe one day we’ll splurge for a Breville but not until this one no longer works. Right now it does so right now it stays.

Well here is my menu for this week. I’m being lazy and not reposting my menu from last week. I did have some changes though.

Monday: Baked Turkey and Musakka’a

Tuesday:

Wednesday: Catfish and Fries

Thursday: Lime and Coconut Roasted Chicken (eMeals – the Clean Eating Version)

Friday: Quesadillas

* I’m allergic to soy so my menu plans are all soy-free
