Last week was a week of turkey.

Since my husband filled our freezer with brined turkey we have to think of some innovative ways to eat. I did manage to give some away but you know this is kind of close to Thanksgiving (past) to be loading up on turkey. Oh well, my hubby meant well and it's never a bad thing to have too much meat so we'll get good use out of it. We just may not be able to eat turkey for a while after this.

Friday night we swapped out our usual Quesadillas for hamburgers. My husband had a hankering over some so he picked up all the goodies and made us a treat. They were good and it must have been a long time since I've had one because I ate the whole thing and don't usually.

Also last night hubby, in the effort to test his culinary skills after some marathon Masterchef (UK) watching, made a lovely dinner of rack of lamb for us. He followed Michel Roux Jr.'s tips for making a flavorful sauce and it came together really nicely. We'll use what we've been learning to have a lovely Sunday dinner for extended family next week. Dessert was frozen yogurt and ice cream cones crushed and shaped with melted chocolate. It was delicious and we ave many hugs and kisses for a job well done.

About this Week's Menu

This week's menu will be nothing special. More turkey and some other things thrown in for a good balance. Now in case you're wondering why I call it Soy-Free. It's because it is. I have a soy allergy so I don't use, cook, or eat soy. Even though I probably have a stir fry a week on menu I don't use soy sauce. I use coconut aminos or beef stock to make my sauces.

Monday: Spaghetti with Ground Beef

Tuesday: Turkey stir fry

Wednesday: Chicken Drumsticks. Haven't finalized a recipe yet.

Thursday: Yummy Lima Beans

Friday: Turkey Quesadillas
