Turkey, Turkey, Turkey, Turkey Dishes for My Menu Plan Jan. 20, 2014
I have the wonderful misfortune to have a freezer FULL of turkey parts.
My husband took another turn past our local market and ordered a whole turkey cut up. Never mind we have another whole turkey already in the freezer from after Thanksgiving.
I admit turkey is good but I fear I’m going to quickly become very sick of it.
Normally I used leftover turkey in Quesadillas, turkey sandwiches, and quick skillet pasta dishes but I need to try and add another dish or two to the mix considering how much turkey we have.
I’m not generally fond of turkey tetrazzini or other creamy casseroles so the hunt is on for fresher ideas. Much like my breakfast hunt.
One of the dishes I make with our abundance of turkey is soft turkey tacos.
My husband brines the turkey overnight and the next night I roast it. Then we package it up for the freezer.
Come dinner night I thaw and slice whatever body part I come upon. Saute some onions and peppers in the skillet and add the chopped/sliced turkey. The brined turkey is seasoned enough for everything so I add no other seasonings. We serve with topppings such as salsa and cheese on soft tacos. Very yummy.
Here’s my menu for this week…
Monday: Roast Turkey (and so it begins) with mashed potatoes and broccoli
Tuesday: Skillet Pork Chops finished off in the oven with rice and zucchini
Wednesday: Thai Turkey Lettuce Wraps
Thursday: Turkey and Wild Rice Soup
Friday: Turkey Quesadillas and Turkey Soft Tacos (it’s take your pick night)
