I'm taking the bull by the horns so to speak. I haven't been getting along with breakfast for some time and I aim to rework that this year. Join me in my quest to find 52 Fresh Breakfast Ideas that don't leave me feeling heavy or my family still hungry. We may revisit dishes you already know or find some new favorites but my goal for 2014 is a new appreciation for breakfast.
I've been a bit absent of late on my breakfast series.
That's because breakfast has been hit or miss in my household. A lot of food on the run and things like that.
But now things have settled down considerably and I'm ready to start posting great delicious ideas for breakfast for you again!
In honor of Back to Homeschool I pulled a new recipe out of my Healthy Breakfast Ideas book from Kitchen Stewardship. I don't know how I missed this one before but it's called Veggie Latkes.
Now I love me a good latke so I was more than anxious to try this out!
Katie uses all kinds of veggies and tells you different combinations depending upon tastes in your family. My family loves zucchini so I made sure to add plenty of that ingredient to my latkes.
The recipe uses eggs which I think I might have used one too many of. I broke Katie's original recipe down into 3rds since I was only serving a few people. That amount was enough for us but I should have used on less egg.
I love that Katie posts so many of her recipes for free on her blog so you can try them out.
