I make this quite a bit for my family from leftover salmon. It's a yummy dish that my daughter just loves. The amount of salmon I use is not rocket science. I eyeball it but if you're concerned just use a can of salmon.

1eachPie Crusthomemade or frozen
1/2wholeonionchopped
1/2can salmon
2cupsmilk
3eacheggs
1/8tspblack pepper
1/2cupcheddar cheeseshredded
Instructions
Sautee chopped onions in a little butter (for flavor) until wilted. Whisk eggs until well blended. Add milk, salt and pepper and whisk until well blended.
Start layering in the premade crust. First half the onions, then half the flaked salmon, then half the cheese. Repeat a second time using up all the ingredients.
Pour the milk mixture over the onions, salmon, and cheese.
Bake on a foil lined pan at 350 degrees F for on hour or until a knife comes out clean from piercing the middle of the quiche.

You can also double the recipe and freeze a quiche for dinner at another time.
