52-Weeks-Fresh-BreakfastI'm taking the bull by the horns so to speak. I haven't been getting along with breakfast for some time and I aim to rework that this year. Join me in my quest to find 52 Fresh Breakfast Ideas that don't leave me feeling heavy or my family still hungry. We may revisit dishes you already know or find some new favorites but my goal for 2014 is a new appreciation for breakfast.

Last week I gave you good old fashion muffins but this week my diet has taken a turn as it so often does.

This usually happens around spring. When my taste buds switch to wanting lighter healthier fare.

These past few days I've been eating something a little different and my daughter thought it looked so good she scrapped her usual toast and boiled eggs to join me.

I can't even remember what I was searching for when I found this Paleo Breakfast Porridge. I'm not even sure why it sounded good (because generally I don't eat that many bananas) but I decided to give it a try. I felt like I wanted some hummus and veggies there too so I dished that up. You can see the results on my image below.

Was it hard to make?

No I actually had all the ingredients on hand and it was quick to whip up.

Was it tasty?

Yes! I was surprise. It really hit the spot. Comforting and not too sweet. No overpowering banana flavor (although hints of it).

My daughter asked for seconds and then asked me to make it again the next day.

Why Paleo?

I wasn't searching for Paleo but just something different for breakfast.
