Happy Monday.

I was actually a little proactive last night and pulled out some meats from the freezer to prepare for this week’s meals.

There are two things I want to do more of in my meal planning….

1.) Use the slow cooker more.

2.) Make up more freezer meals.

I accomplished one of those this past week which makes a grand total of two meals in my freezer for busy nights.

One of the freezer meals is salmon quiche. I haven’t made that dish in over 6 months! And it’s  a family favorite. My daughter was pretty happy. I made two quiches and froze one for a future dinner.

I haven’t decided what to do for the slow cooker yet.

So this is what I pulled out the freezer yesterday for this week’s meals…

Salmon fillet

Pork Cutlets

Ground Beef

Ground Turkey

Hmmm…. no chicken. Oh well we’ll survive.

 

And this is what I have planned for dinner this week….

Monday – Salmon

Tuesday – Meat Loaf (makes one freezer meal)

Wednesday – Makeover Pork Cutlets

Thursday – Pea Soup

Friday – Quesadillas
