Happy Monday! I trust your weekend went well and you’re ready to face a new week with fresh new foods to serve your family.

Last week we got busy in the garden and my husband ended filling in on one of my cook days. He does a nice job in the kitchen and I’m always happy when he wants to cook. He made chicken and potatoes with green beans and it was delicious! This momma was happy!

This week is nothing spectacular but I am going to try a dish with the leftover pork we had last week. In watching a new cooking show I was inspired by an Asian comfort dish to try a version of my own. I don’t mean to be so vague about it but truly the whole thing hasn’t gelled yet completely in my brain. I’ll share more details next week after I made it so stay tuned.

Monday: Baked Catfish

Tuesday: Pizza

Wednesday:

Thursday: Shredded Pork Leftover Asian Dish

Friday: Quesadillas (Mexican night)
