Food is the last thing on my mind this week…No I take that back. Food is on my mind because I need to eat carefully this week. I came down with an awful headache that could be classified as a migraine yesterday. I’m much better today but there was a bit of nausea attached that is making me mindful of what I put near or in my mouth.  A fresh smoothie sounds good right about now.

Last week, true to form, I detoured from our menu plan and made a couple of different things. I have a few pounds of frozen chicken thighs so I cooked up 10 pounds of those.

I ended making Oven Crisp Chicken Fingers and Crispy Rice covered chicken from [simpleazon-link asin=”0966446771″ locale=”us”]30 Day Gourmet’s BIG Book of Freezer Cooking[/simpleazon-link]. Actually the last recipe is from an earlier version of the book but I checked out a copy from the library before purchasing my own Kindle version. I wanted to also have a membership to the site where I can get many more recipes.

Working 10 pounds of chicken wasn’t so bad. Although the house smelled like baked chicken for a while. The Crispy Fingers were pretty yummy. The Rice Covered Chicken not as flavorful. Will need to use some sauce when I cook those for a meal.

What we ended up eating last week.

Monday:  Baked Turkey and Rice

Tuesday: Homemade Pizza

Wednesday: Crispy Rice Chicken and Sweet Potatoes

Thursday:  Chicken Cassoulet

Friday: Quesadillas

Well that’s enough about last week.

Monday: Corned Beef, cabbage, potatoes

Tuesday: Chicken Parmesan

Wednesday: Sloppy Joes on Ciabbata Bread

Thursday: Swai fish with Creamy Lemon-Horsradish Sauce (delicious repeat from eMeals)

Friday: Quesadillas
