Monday – Menu Plan for June 23, 2014

It’s week two of eating through the freezer and pantry! Yaaayyy! Or Boooo!  Why does the freezer still look as full as last week? Oh well we still have 3 to 5 weeks to go.

We started eating through our freezer last week in preparation for our coming move.

Our refrigerator/freezer and our chest freezer were stuffed with food and in the interest of being frugal and avoiding moving a chest freezer full of food we’re limiting our grocery shopping to milk, eggs, and fruit/veggies and coming up with meals from what we already have on hand.  No more buying bread.

Sounds great huh?

I never thought this would be hard for me but I already caved last week and purchased some salsa for our weekly  quesadillas.

The meals are easy to come up with but we had a habit of stocking up on big meat. So I’ve been having to thaw huge hunks of meat. I’ve got 20 lbs of chicken to work through but it’s all in a solid frozen block. That’s on the schedule for this coming Sunday.

In the mean time I have to come up with this week’s menu from what I have on hand. Forgive me because it’s going to be sparse and the veggies are whatever I seem to have on hand.

Monday: Chicken Stir Fry

Tuesday: Baked Sole

Wednesday: hamburgers

Thursday: salmon chowder

Friday: tacos
