On the Kitchen Counter October 17, 2016

Greetings:

Happy Monday! We’re finally done with eating non-stop soup. Everyone is pretty much better. My husband is still coughing at night when he relaxes but he is getting better (thank you for asking).

I finally post my review for MyFreezEasy last week and even though it’s done I feel like I left so much out. The program is that good. For many of us moms who reviewed it this Freezer Cooking program has changed our way of cooking.

This past week I finally made Chinese Butter Cookies. I have been wanting to make these since our trip to Seattle at the end of the summer (okay it was one day and we were really just wanting to ride the train).

I was enjoying a long browse in my favorite Asian market Uwajimaya and I sent my husband and daughter off to find a bakery and get themselves something nice. Well they wandered off and came back about an hour later with a small container of butter cookies. Butter cookies! I’m like you were in the Asian district where you could pick up something cool and different! I had even called my mom for some ideas (she used to have all these friends from various parts of Asia who fed her all kinds of goodies) and you come back with plain BUTTER COOKIES???!!!!

So anyway on the train I got hungry and decided to eat one, then two, then we polished off the container before getting home. These cookies are melt in your mouth goodness. They’re soft but not mushy and they weren’t too sweet. I love them!

I wasn’t sure what they were called (because my family isn’t good on details like that). And I’m not aware of any Asian bakeries in my town. So I started scouring the internet before landing on this recipe. I guess the name and it did bring these up. So I made some last week for my daughter’s friends who were hanging out with use for the day. They had a little tea party with their dolls and I wanted to surprise them. They were a hit. I think I shouldn’t have used salted butter though. You can get the custard powder on Amazon(I did) and it’s soy free. Lots of butter so I won’t be making them often.

In other kitchen news my friend also blessed me with a load of tomatoes and I made some Freezer Salsa. We eat salsa every week with our Friday meal so this will be helpful 🙂
