Monday’s Menu for March 29, 2015

Happy Monday everyone! A fresh new week and a great chance to get it right in the kitchen.

Last week was all about eating out of the freezer and from leftovers from the refrigerator. It never fails that most of my dinners result in leftovers so reusing them for fresh new meals is smart cents.

Last week I substituted Chicken Curry, which was from the freezer, for Thursday’s Chicken Cassoulet and Friday I was feeling puny so my husband cooked one of his famous stir fries with lots of veggies.

It went so well I only spent $15.50 at the grocery story last week!

Well that was before I told my husband I wasn’t feeling well and could he pick up a few things at the store when he came homes. The picture above is his haul. When you send my hubby on a mission he delivers! He got waaaay more than I asked for but it is greatly appreciated and has been going to good use.

This week I hope to repeat more of the same. We’re having leftovers most weeknights.

 

Monday: Leftover Baked Chicken with rice and veggies

Tuesday: Leftover meaty spaghetti sauce makes Skillet Mac

Wednesday: Chicken Stir Fry

Thursday: Homemade Chicken Noodles Soup

Friday: Ground Turkey Quesadillas
