Monday – Menu Plan May 6, 2014
We had a yummy Sunday dinner last night.
Normally Sunday dinner is with extended family but this week it was just the three of us. We actually didn’t have a dinner planned but Saturday I decided to thaw some Flat Iron steak from the freezer. Hubby loves his steak.
In my quest to learn a little more about cooking and making certain dishes I was more focused on dessert than dinner but on the way home from church I decided what I would make for dinner.
Flat iron steak with fondant potatoes and braised bok choi with mushrooms. Everything came out really delicious, although the potatoes could have been a tad more seasoned. I simply roasted the steak in the oven after searing it on the stove top. My husband even took all my pan juice and make a great sauce for everything.
For dessert I tried my hand at making Panna Cotta with Strawberry Coulis and Pistachio nut tuiles. I was feeling my oats and it actually came out really good.
This week’s menu is uninspired and I’m starting to think it’s the day I choose to plan that is not setting well. Sunday night is usually major down time for me and figuring out what to serve come Monday should be done on a day when I have more brain power.
Well while I figure that out this is what I’m serving this week…
Monday: Leftover Chuck Roast in Foil
Tuesday: From the freezer: Meatloaf and Mashed Potatoes
Wednesday: Stir Fry
Thursday: Soup of some sort
Friday: Beef Tacos
