Menu Planning for Monday June 1, 2015

Happy First day of June! The official first day of summer is just around the corner.

And that means it’s time for…

  • End of School
  • Father’s Day
  • Berry Picking
  • Lighter Meals

I accomplished the last two last week. We went strawberry picking midweek and came back with 11 pounds of fresh strawberries. We would have picked more but we were on a time crunch. This year I didn’t do much with my haul but eat them fresh, share with extended family, and freeze the rest for smoothies. We may go back before the season ends but we’ll have to figure out when to fit it in.

Our weather has been very warm these past days so that always makes me want to serve lighter meals. How about you? I mentioned last week that I was going to make Korean Tacos and I did. The original recipe calls for using corn or flour tortillas. I actually used pita like bread and they were absolutely delicious! My husband has requested them again and since I actually have a recipe (albeit altered a bit) this time that will be a possibility.

This next week I would like to pull as much from the freezer as much as possible so no fan

 

Monday: Leftovers (cornmeal over friedchicken drumsticks)

Tuesday: Pan Fried Fish and small salad

Wednesday: Ground Turkey and fresh veggies in rice wraps (just like it sounds)

Thursday: Soup

Friday: Pork Chops with Mango Salsa
