This entry is part 49 of 112 in the series Monday-Menu Plan

apple-week

It was apple week last week at RavinHill. My local produce market had a Manager’s Special on apples and I picked up a bushel box for $3!! For $3!!! was I going to let that go? No way!

At first I was like What am I going to do with all these apples??!! Maybe this is too much!!! Blah! Blah! Blah! But luckily I didn’t let myself talk my way out of it.

My mother was the one to show me the apples. I had been about to buy some regular priced apples for $1.49 a pound when I heard her pst! There they were lovely and smelling great! One apple had the sticker for gala on them but we have all sorts of varieties and I’ll have to get back to you on what I think they were. Sweet and made a good pie I’ll tell you that!

I got them home and my husband helped me to cart the big box in the house.

My daughter washed the apples for me. We filled the sink and she used the veggie scrub brush on them. They were all in great shape except for one which we tossed.

Then hubby used our peeler to peel a big bowl full for me.

Meanwhile I was preparing things for the canning. I was going to can as much as I could for the see apples. I haven’t canned in a while since we’ve been trying to move so I had to do a little digging in the garage to find my canning supplies.

I didn’t think it was going to be so much work bu t with the help of my family it went much quicker than it could have.

We peeled, washed, and I canned.

I wanted to can apple slices as opposed to apple sauce. I used big quart jars. I used the direction from PickYourOwn. That is my favorite site for canning information.

I also ended up making an apple pie It was delicious! I got the recipe from Catie Ronquillo here and have bookmarked it for making another pie hopefully in the near future.  It was D-E-L-I-C-I-O-U-S! And I didn’t even know what variety of apples I was using. I picked some that looked a little greener than the rest and then the rest a pretty sweet yellow red color.

Meanwhile my husband rigged up a dunking apple thing for our daughter and she spent some time dunking for apples while I worked. The apples with bite marks in them? Well we put those aside for her to eat.

Have I ever told you how much our daughter loves apples? She eats one a day no exceptions. And when she’s done? there is nothing left but the seeds and  the stem. She eats all the rest!  The stuff that many people would never eat. Oh well.

I also handed out many apples to my women’s group that meets at my home once a month. One of my friends will is earching high and low for apple smoothies as she just got a new Vitamix. I’m torn between a Vitamix and a Blendtec but since I can’t afford either one right now so I’ll just go right on imagining.

Meanwhile we’ll be juincing plenty of apples with our Breville

So what did we have for dinner last week? Well since midweek we had the apples invade there it was leftovers on Monday, curry which is becoming a regular, and my chicken made from Frontier Sops tomato bisque.

This week since i have so many apples I’ll be trying a pork apple dish. Just not sure which one yet.

Here’s my menu plan for the rest of the week…

Monday: Leftovers

Tuesday: Fish (talapia)

Wednesday: Pork apple dish

Thursday: Chili

Friday: Turkey Quesadillas
